"Work? No. Today is going to be a holiday..."

Our first week of meal planning was a major hit.  Matt really loved knowing what was for dinner - and I found myself really looking forward to trying some of my new recipes.  Thursday night was Mexican Pizza night, and I really impressed my skeptical husband.  He gets kind of funny when I start talking about "spicy" or "flavorful" dishes.  I think at times he is apt to hide the spice rack from me.  But, for no good reason!  I am proud to say he loved the pizza, and it fed us lunch for two more days.  I am a FAN of good leftovers that heat well and don't leave me hungry.  I had to capture this fabulous dinner...


I was also happy that the majority of the ingredients were organic.  I went full out and bought lean, antibiotic-free, free-range ground beef.  I don't think I've bought beef the entire time we have been married - if ever?  It's not something I plan on making a habit of, but it was a delicious treat.

Last night, we had dinner at Mom and Dad's and made Bruschetta Chicken Bake.  It seemed to be a big hit, and something I would make again.  I substituted StoveTop Stuffing for another brand that did not have the evil High Fructose Corn Syrup, lol.  Much appreciated by all, I'm sure :)

Matt has been working his new job for over 2 weeks and is really loving the autonomy and variety of patients.  It really encourages me to see him so happy and satisfied, and I'm reminded that everything happens for a reason.

It's humid, hot, and rainy out now, so I have tackled the laundry pile and watched Roman Holiday.  Is anything better than Gregory Peck? What a dreamboat...*sigh*...
